This is the yummiest pizza!
One day my husband and I were in the grocery store and we had no idea what we were going to eat for dinner. I suggest that we make our own pizza and he agrees! Five minutes later we're standing in the middle of the canned food isle next to an empty shopping cart, with our phones out checking recipes.
We finally found one but decided to tweak it a little. Here's our altered recipe.
Mediterranean Pizza Recipe
1 - Pillsbury Pizza Dough package.
(We like the thin crust but you can also use the thick one.)
1 - 12 oz can Marinated Artichokes (save the liquid)
1 - 6 oz jar of Kalamata olives
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
2 cups Monterey Jack cheese
1/4 lb. thinly sliced ham
1 cup halved cherry tomatoes
2/3 cup feta cheese
Directions
Preheat oven to 400 degrees. On a non greased cookie sheet or pizza pan spread out your pizza dough. Bake it in the oven for 5 minutes. Take the pizza dough out. It should be slightly golden. Lightly brush the artichoke marinade (liquid that the artichokes come in) on the pizza crust. You don't want to put too much on it because the crust will get soggy.
Sprinkle the basil, oregano, and thyme over the marinade. Add 1 cup of the Monterey Jack cheese. Then add the ham, olives, artichokes, cherry tomatoes and feta. Sprinkle the remaining Monterey Jack cheese. Pop in the oven at 400 degrees for 10 minutes or until crust is golden brown and cheese is melted.
